Easy Garden Fresh Lunch!

I have to admit, when I find something amazingly easy and super tasty, especially with seasonal garden fresh ingredients, I made it quite a few times in a short span of time.  This is my new favorite weekend lunch for two.

For the drinks, it was just ice water with a little crushed apple mint and lemon juice.  I sauteed the abundant summer squash with a little garlic and vegetable broth.  A perfect summer salad…peeled and sliced cucumbers, diced tomatoes, lemon juice, salt & pepper.  Lastly, the super tasty sandwiches:  mozzarella & cheddar cheeses with fresh tomato and basil, all grilled in whole wheat bread.

Easy DIY Garden Project: Tea Mini-Vase

Super easy little hostess gift or an addition to any other gift:  a little tea mini-vase.  I selected a few herbs that look pretty and also are great for making tea.  For this vase, I used lemon balm, mint and lavender.  I put them with some water in a tiny little jar.  It is a pretty little gift to give someone, and they can also use the herbs for making some fresh tea!  Would also make a great party favor for a tea party. 🙂

No Sugar Needed Lemonade Recipe

Homemade strawberry/apple-mint lemonade, with no sugar needed. 🙂

This is the easiest lemonade I’ve ever made.  Here is what I added together:

1 quart water
juice from 3 lemons
5-6 strawberries, sliced and mashed with a mortar and pestle
5-6 sprigs of apple mint (a unique variety of mint with a sweet, apple-like taste), leaves removed from stems and mashed with a mortar and pestle

That’s it!  Just mix it all together and serve over ice! It is naturally sweet and needs no additional sweeteners. 🙂
