Street Vendor Style Chili Lime Cucumbers

In the theme of replicating street vendor food treats, like yesterday’s post, I wanted to share my favorite easy snack. it is especially great during the summer when cucumbers are in season and plentiful. Every time I see a street vendor selling cucumbers, I cannot resist getting one. đŸ™‚

Ingredients:
1 peeled and sliced cucumber
juice of 1 lime
salt
chili powder

When the street vendors make it, they toss all the ingredients in a bag and shake to blend the ingredients together. I usually just put everything together in a bowl and mix to make sure all of the cucumber pieces get coated, but either way works!

Easy Garden Fresh Lunch!

I have to admit, when I find something amazingly easy and super tasty, especially with seasonal garden fresh ingredients, I made it quite a few times in a short span of time.  This is my new favorite weekend lunch for two.

For the drinks, it was just ice water with a little crushed apple mint and lemon juice.  I sauteed the abundant summer squash with a little garlic and vegetable broth.  A perfect summer salad…peeled and sliced cucumbers, diced tomatoes, lemon juice, salt & pepper.  Lastly, the super tasty sandwiches:  mozzarella & cheddar cheeses with fresh tomato and basil, all grilled in whole wheat bread.
